What is batbout?

Batbout is a small Moroccan flatbread made with flour and semolina, left to rise and then cooked in a pan or on a hot griddle, with no oven. As it cooks it puffs up and hollows out, so it can be opened like a pocket and filled. In Morocco it is eaten at breakfast, as a snack, or stuffed like a sandwich.

Why griddled batbout?

At Nomad Bun every batbout is cooked on the griddle, in plain sight, at the counter. No oven, no reheated bread: the dough puffs up in front of you, we open it while it is still hot and fill it to order. The inside stays soft, the crust light, and your batbout is ready in about 5 minutes.
